| Poultry Stew
Peanut insisted that I write this recipe down. I made this last night and she said she would have had seconds if she’d had the stomach for it! But we have a lot of leftovers, so she can have it again for a while.

Ingredients:
Meats
About a pound of cooked chicken meat
About a pound of cooked turkey meat
A pound of bacon
Canned Stuff
1 can green beans
1 can corn
2 cans stewed tomatoes
1 small can of chopped green chilies
1 can light red kidney beans
1 can dark red kidney beans
Veggies
1 medium onion
1 large red pepper
Half dozen or so small red potatoes
Spices
Salt
Pepper
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 large spoonful of minced garlic
Liquid
V-8 juice
Directions
I used a 5.5 quart soup pot. I wouldn’t try to fit all this goodness into anything smaller.
Throw in the tomatoes and green chilies, then drain the beans and corn and add them to the mix. Cut up the veggies and add them. Cut up the poultry meat and add it. Cut the bacon into 1” pieces and fry it to render the fat out of it. It doesn’t have to be crispy brown, but you don’t need all that bacon fat in the stew, either.
Stir it all up with the spices and add V-8 to the right level of liquid for you. Bring to a light boil then simmer it until the potatoes are done.

Actually, Nell, I didn't realize when I took it out of the freezer, but the turkey was leftover from last Christmas! Vacuum packers are marvelous inventions!! It was as good as it was the day I sealed it.

For the puree stage, put this in a blender. All of the taste without the texture.
Whenever you use a blender with hot liquids, take precautions against the possibility of splatter if it blows the lid off! (Just put a cloth over the lid and hold it with one hand while you operate the blender.)

CT | CT I think I need to invest in a vacuum sealer, sure would save me from throwing so much out after it gets freezer burn!!

It'll pay for itself just in being able to buy bulk meats instead of individual servings. When we do a turkey, we do a 20-lb bird for the two of us (same work as a 12-pounder) and strip it to the bones. What we don't eat in two days we seal and toss in the freezer. Be sure to date everything as you pack it. It will blow your mind later to see how good things are for being as old as they are. I've pulled stuff out of the bottom of the freezer that's 18 or more months old and never had a problem.
