Default Pulled pork in the crockpot

So even though it's 80+ degrees here in New England on October 9th, it's still football season and in this house that means Sunday dinner!!! The kids asked for pulled pork which I haven't made since before my surgery so I decided to try a modified recipe to what I was used to and boy oh boy did it come out fantastic!!!

3lbs boneless pork shoulder
1/2c. sugar free ketchup
1/2c. firmly packed Splenda brown sugar
1/3c. apple cider vinegar
garlic, salt, pepper, onion powder, and smoked paprika (I don't measure these, I just go by smell )
I also dry rubbed the pork with some smoked paprika.

Place all ingredients in crock pot and cook on low for 8 hours (or high for 4hours)

Take pork out and "pull" with 2 forks put back in crock pot for 20-30 min so all the meat marinates.

I served it with coleslaw (homemade), baked beans, and grilled asparagus. The kids and DH couldn't get enough!


I also made the flourless chocolate cake recipe that RaCina posted (Delicious). I made a homemade no sugar added mint chocolate whipped cream to serve with it and it was fantastic! What a perfect ending to a great day!

Yes, you can often get insurance cover for your Weight Loss Surgery.
Our own Craig "Big-T" Thompson has been there and done that, and he's written an e-book about it.

We may have to be discriminating in what we eat, but, as recipes like this prove, we most definitely do NOT have to be deprived!!!

This just sounds way too good not to give it a shot!! I think I'll try it, but I'm going to brine the roast overnight before it goes in the pot.
