Weather is cooler, which means it's time for soups and stews again. I've been eating homemade ham and cabbage soup for the past two days. I love it! I've been enjoying more cabbage lately, even started making my own sauerkraut. So much better than the store bought stuff.

Oh, my gosh! I made the best Lentil Soup today.....Hum a hum a YUMMY! If ya'all want the recipe let me know. With Lentil soup...we eat it like in Turkey (the country) we squeeze a bit of fresh lemon in our bowl and sprinkle a bit of crushed red pepper on top.
I don't know about fat burning. But yummy tasting.

Here is the Lentil Soup Recipe for all you Veggies out there. Thought it would be easier just to put it on here. It is a bit of a modified Alton Brown recipe. Ingredients - 2 tablespoons olive oil
- 1 cup finely chopped onion
- 1/2 cup finely chopped carrot
- 1/2 cup finely chopped celery
- 2 teaspoons kosher salt (I love kosher salt but you don't have to use)
- 1 pound lentils, picked and rinsed
- 1 canned peeled diced tomatoes (16 oz can) I drain the tomatoes a bit
- 2 quarts chicken or vegetable broth (homemade is best but the new Knorr "gel" packs of broth are fabulous- use 2 packs and 8 c. hot water-almost like homemade but not too salty)
- 1/2 teaspoon freshly ground coriander (I don't use the fresh ground)
- 1/2 teaspoon freshly ground toasted cumin (I don't use the fresh ground)
Directions
Place the olive oil into a large 6-quart heavy soup pot and set over medium heat. Once hot, add the onion, carrot, celery and salt and sweat until the onions are translucent, approximately 6 to 7 minutes. Add the lentils, tomatoes, broth, coriander, cumin and stir to combine. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes (It took almost an hour for me but I live at 6800 above sea level). Using a stick blender, puree to your preferred consistency. Serve immediately.
** Note if you use red lentils you will probably not need to use the stick blender (stir stick or masher) because red lentils are so soft.
