Pumpkin "Cheesecake"
I've been killing myself avoiding all the Fall Pumpkin Treats. I love pumpkin everything in the Fall. So, I made my version of Pumpkin Cheesecake tonight and I LOVE IT. I thought I'd share! Here's what you need:
4 cups Unsweetened Vanilla Almond Milk,
2 packages Sugar free, Fat free Cheesecake pudding powder,
1 package Sugar free, Fat free Vanilla pudding powder,
1 cup 100% Pure Pumpkin,
1 Tbsp Cinnamon,
1.5 Tbsp Pumpkin Pie Spice.
Mix pudding and almond milk. Refrigerate until set. Mix in remaining ingredients; stirring by hand. Let set for about 10 minutes in refrigerator. Serve.
Makes 8 servings. Per serving: 71 calories, 13 carbs, 2 fat, 1 protein, 1 sugar.
