Lightbulb Accidental Sweet & Sour Chicken Stew

This was a complete surprise for me!! I was actually trying to make some BBQ chicken, but somewhere between intent and dinner – a miracle happened!!

It didn’t turn out at all like I thought it would, but it turned out pretty good. At least, that’s what our dinner guests said. (Sure, I invite guests over for untried recipes I’ve just created. If I think it’s going to be okay, at least it won’t poison them!)

I think the secret’s in the Budweiser and the marination. That’s the only thing it could be. (Maybe the sweet potato has something to do with it???)

Ingredients:

1 large onion, diced
1 green bell pepper, diced
1 medium sweet potato, diced
5 pounds of chicken thighs, skinned and boned, then cut in smaller pieces
1 bottle Budweiser barbecue sauce (it was the lowest in sugars on the shelf at Wal-Mart)
3 tablespoons minced garlic

Directions:

Toss all of the above in a big bowl and let it marinate in the fridge overnight. In the morning, put it in the crockpot for however long you need (I did it for 7 hours on Low). After we got home from church, I tasted it and added about a ½ teaspoon of chipotle seasoning. Didn’t even use any salt or pepper. Then I thickened it with a bit of corn starch and water.

Voila!! I intended it to be barbecue and it came out sweet & sour! Hoodathunkit??

Alt Weight Loss Surgery Insurance
Yes, you can often get insurance cover for your Weight Loss Surgery.
Our own Craig "Big-T" Thompson has been there and done that, and he's written an e-book about it.
