I found the following recipe while looking for recipes for desserts my schools Christmas luncheon tomorrow... It looked good, and decided to try it... We can have some of this... as soon as the other faculty tries it tomorrow I will post how they liked it...

No Sugar Chocolate Fudge
2 pkgs (8 oz each) low fat cream cheese softened

2 squares (1 oz each) unsweetened chocolate, melted and cooled

1/2 cup splenda

1 tsp vanilla

1/2 c. chopped pecans



Beat cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans.
Pour into an 8" square baking pan lined with foil.

Cover and refrigerate overnight.

It was good... they liked it and didn't know it was sugar free until they asked for ingredients. My nut says splenda is ok but ask yours

my nut says splenda is ok too - but my DH and my older daughter cannot use splenda without digestive issues, so we tend to use truvia - it's not the same consistency as splenda, so I'm not sure if it can be used in place of it.

I am curious. Splenda didn't bother anyone's stomach..? No diarrhea??
I wouldn't mind Truvia... but not sure if it is interchangeable.
I got some SF mini choc chips from Nutsonline.com. Haven't tried them yet.

Love fudge, so I may give it a try. THanks for sharing.

I don't think I used splenda... I am pretty sure I used granulated equal to me its all the same... I am sure any sugar substitute will work

Splenda gives me migraines if I use too much of it. I try to keep it to a minimum and use more Truvia instead.
