I was trying a few new things today for our Christmas dinner. These turned out pretty good! Peanut liked them, that's the important thing!

3 enormous sweet potatoes, scrubbed
most of a stick of butter
2 tablespoons of Splenda mixed with cinnamon

Steam the sweet potatoes until they are soft and the skins fall off. (I cut mine into reasonable pieces so they'd all cook evenly.) When they're ready, slice the butter into patties and put them in the bowl, then peel the skin off and toss the sweet potatoes into the bowl. Mash them just like regular (white, carb-rich and starch-laden) potatoes. Mix in the cinnamon/sweetener mix to taste.

Makes enough for leftovers!
