Post Ginger Applesauce Cake

So right after my surgery my mom bought me a cookbook called "Recipes for Life after Weight Loss Surgery". I've made a couple of things from it, that are ok, but today I made this cake and it is absolutely delicious, so I wanted to share!


2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp all spice
1/2 tsp salt
3/4 cup brown sugar substitute (I used splenda brown sugar)
2 eggs
2 Tbsp fresh grated ginger root (I used 1tsp ground ginger as I'm not a huge ginger fan)
2 Tbsp ground cinnamon
1 1/2cups unsweetend apple sauce
1 1/2tsp vanilla extract

Preheat oven to 350 degrees. Spray a 1 1/2 quart loaf pan (I used a 9x13 pan instead) with cooking spray.

In a medium mixing bowl, sift together the flour, baking powder, baking soda, allspice and salt.

In a separate bowl, mix together the brown sugar, eggs, ginger, applesauce, cinnamon, and vanilla.

Pour the wet mixture into the dry mixture in thirds, stirring all the while with a wire whisk. Continue mixing until just smooth (Do not overmix).

Pour the batter into the pan and bake for about 50 min until a toothpick comes out clean. (Mine cooked for 35 min in the 9x13 pan)

Cool the cake for 30 minutes at room temperature before releasing it from the pan.

Makes 12 2oz servings*

Nutritional information:
Calories: 107
Protein: 3.5g
Carbs: 20g (I think most of this comes from the applesauce so it is "good carb" )
Total fat: 1g
Sat fat: .29g
Cholesterol: 40mg
Sodium: 198mg
Sugars: 3.6g
Fiber: .84g

*Since I used the 9x13 I was able to cut 16 pieces, that are still equal to the 2oz serving.*

I'm glad you enjoyed it! I actually made it again today and completely left out the ginger. I liked it so much better as ginger is not one of my favorite flavors.
