Quick Rice and Tapioca Pudding
You don't have to do without creamy, delicious eats.
Today we're turning our attention to this sweet treat that fits into the plan. Join us by making this yummy Quick Rice and Tapioca Pudding with vanilla for rich flavor and lemon to add a fresh tang. If you like it, check out some other BLC favorites at The Biggest Loser Club.

Quick Rice and Tapioca Pudding
Ingredients:
1 3/4 cups low-fat (1-percent) milk
1/2 cup brown rice, quick-cooking
3 tablespoons raisins
1/4 cup maple syrup
2 tablespoons tapioca, quick-cooking
1 egg, beaten
1/2 teaspoon lemon peel, grated
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla

To Prepare:
In heavy saucepan, combine milk, rice, raisins, syrup, tapioca, egg, lemon peel, and cinnamon. Cook over medium heat, stirring constantly, until mixture is very hot and slightly thickened, 7 to 8 minutes. Do not boil. Remove from heat. Stir in vanilla. Cover and let stand until thickened, 20 to 25 minutes. Stir before serving. Serve warm or chilled.

Yield: 6 servings
Nutritional Values: Fat: 1.6 g. Carbohydrates: 22.3 g. Protein: 3.8 g. Calories: 116.2 kcal

Can I have tapioca post-op? My doc says that SF puddings count as part of my liquids for my immediate post-op time. Can I make SF tapioca pudding or will the little pearls hurt my pouch? Thanks! Also, on clear liquids, did ya'll drink juice, or what? I just have two days of clear liquids, so I'm not that worried. Probably last juice ever for me!!

I'd say no. I was told no yogurt with fruit in it because the seeds may get caught. I love tapicoa pudding but cannot find sugar free. I believe no juice right away either. I do have 4 - 6 oz or OJ each morning with my iron pill.
