Quick Rice and Tapioca Pudding Ingredients: 1 3/4 cups low-fat (1-percent) milk 1/2 cup brown rice, quick-cooking 3 tablespoons raisins 1/4 cup maple syrup 2 tablespoons tapioca, quick-cooking 1 egg, beaten 1/2 teaspoon lemon peel, grated 1/4 teaspoon ground cinnamon 1/2 teaspoon vanilla To Prepare: In heavy saucepan, combine milk, rice, raisins, syrup, tapioca, egg, lemon peel, and cinnamon. Cook over medium heat, stirring constantly, until mixture is very hot and slightly thickened, 7 to 8 minutes. Do not boil. Remove from heat. Stir in vanilla. Cover and let stand until thickened, 20 to 25 minutes. Stir before serving. Serve warm or chilled. Yield: 6 servings Nutritional Values: Fat: 1.6 g. Carbohydrates: 22.3 g. Protein: 3.8 g.
