One nite I mad a meat loaf with Ground turkey meat. Used about 1 # meat. Put onion powder, salt pepper and few crushed crackers and an egg in it. Put in oven uncovered on 450 for 15 minutes to trap the juices in and then after the 15 min. I put some sliced bell peppers on it and a can of tomato sauce and covered. Baked it for 45 minutes more at 350. Then I cooked some fresh yellow squash. When Done on my plate I kind of mashed the squash into the meatloaf so it was very moist. Did not eat the bell pepper but it had the flavor so it was tasty. It acutally went down and did not get stuck. Mattie.

It sounds great! Kim - I would imagine the reason we can't have bell peppers is because of the "skin" -- even cooked their tough -- but it makes me think -- maybe stuffed peppers with this meatloaf recipe would work?

kim i think early out peppers were a no no for me too. something about the skin and the waxy film or something. i cannot remember for the life of me what the actual reason was but it made sense at the time....
