Hey ladies and gents got this receipe from a co-worker and its sounds yummy to me. I havent tried it yet but I think Im gonna. Perfect fall receipe.

FAT FREE PUMPKIN PUDDING

1 ( 15 ounce ) can pumpkin

1 ( 1 1/3 ounce ) box surgar free vanilla pudding mix

1 teaspoon pumpkin pie spice

1 cup water

Mix the water and pudding mix together until there are no lumps.

Bring to a slow boil in saucepan

Stir frequently

Remove from heat and fold in pumpkin and spices

Pour into 8 small serving cups

Refrigerate for 2 hours until firm

Top with fat free whipped topping to serve

Nutrition Facts:

16 calories, .1g fat, 4.0 g carbs, protein .6grams

to be honest I didnt like it. I made it again a second time not using the water and used low fat milk and less pumpkin. Tasted a bit better. But not exciting to me.

I used skim milk and the kind of vanilla pudding you cook. I sorta like a cooked pumpkin dish better. I'll get the recipe from my ma - it's an old weight watchers recipe that you bake up like a pumpkin custard. Its not real sweet, although you could add more sweetner if you like, and it's really good with sf ff cool whip.
