I remember a few weeks ago a thread about how to eat peanut butter. So here is my version of a great African classic that the whole family can enjoy. Its far tastier than it sounds and i seem to get full on such a little.

Justice’s Peanut Soup
My take on a great African Classic

What you need
  • two cups (600ml) chicken broth or chicken stock
  • one onion, minced
  • one small sweet green pepper (or bell pepper), minced
  • one clove of garlic, crushed or minced
  • salt and black pepper (to taste)
  • one or two hot chilli peppers, minced (depending on hot you like it)
  • one can of chopped tomatoes (400 ml)
  • one cup (300 ml) regular or natural unsweetened smooth peanut butter
  • one cup (300ml) milk
What you do
First mince up the onion, green pepper, garlic and chilli. Just chop it as fine as u can. Some people might prefer it a little chunkier than others but the finer you chop it the less cooking it will take.


Then add your chicken stock and canned tomatoes to a pan on a high heat. Add the mince up ingredients and bring to the boil. Reduce the heat, cover and simmer for 30mins. Give it a quick stir once or twice just to make sure nothing sticks.


After 30mins, add the peanut butter stirring constantly. Then the milk. This really depends on how thick you would like the soup so add as little or as much milk as you like. At this point I would advise you to taste the soup before you season it with salt and pepper. I usually don’t have to season at all.

Take off the heat and its ready to server. Enjoy!

Well i always herd that chili pepers help you loose weight

But personal i just think they make your food pass through you quicker and i find them alot hotter on the way out! Ouch!!!
