Default Christmas Krum Kake cookies

Today I've been experimenting with a favorite ethnic recipe of mine...krum kake! (Norweigan) This turned out so well that my mother, six year old son and 13 year old daughter really enjoyed them. They're not completely "traditional", if you know what I mean...

I'll be bringing these to the party tomorrow night - if they survive my family!

Diabetic Cinnamon Krum Kake

4 whole eggs (farm fresh if possible)
1/4 cup melted butter (no substitutes)
1 cup fat free 1/2 and 1/2
1 cup Splenda
1/2 to 3/4 c flour
1 tsp vanilla extract
1 tsp cinnamon

Batter should appear runny.

In a mixer, slightly beat the eggs. Melt butter in microwave for 25 seconds. Pour slowly into slightly beaten eggs as they are mixing. Add in 1 tsp vanilla. Add 1 cup cream, 1 cup Splenda, 3/4 cup flour and 1 tsp cinnamon. Blend well after each addition.

Pre-heat the krum kake iron. Spray with Pam only the for the first two cookies. Using an electric krum kake iron and a soup ladle, pour 1 TBSP batter onto each side. Bake for only 1 to 1 1/2 minutes, depending upon how brown or crisp you'd like your cookies.

Makes approximately 4 doz. small or 3 doz. medium-sized cookies. You can also choose to roll your cookies around a wooden cone. My great-aunt Minnie Torhol did that.

For garnish, I have used whipped cream and strawberries. Fill the cones with both and enjoy!

This is definitely a Christmas goodie - only to be made around the holidays. I was able to eat two, but didn't go farther than that. The fun part was to watch others eating them! Last weekend I made over 300 cookies (that I can't eat), but I love to give them away and receive the compliments anyway!

Hey, does anyone know an online recipe calorie/nurtrient calculation site? That would be a good place to get nurtritional count for recipes.

I am a school teacher, and it delights my students each year when I bring in trays of home-made cookies. I believe that some of them don't get a chance to have home-made treats otherwise, so it's my "Weihnachtsgeschenk" or Christmas present to them on the last day before the break. (Of course, if they choose not to accept a cookie due to their own religious beliefs, that is perfectly OK with me, too!) I can't remember a time when any students refused a cookie (except if they were a diabetic). I also am careful not to use nuts when baking because it seems so many students have allergies. I let them all know what's in them before they choose. I think it's fun!

Maryann - what a sweet thought! You're right about some kids not getting anything homemade - I've only made one sweet treat so far this year and the whole time I was making it my mouth was watering like crazy!
