Not to scare you, but unfortunately, the answer is no.
There are a number of stuff that can happen as a result of ANY abdominal surgery, not just gastric bypass throughout your life, and there are others that gastric bypass contributes to greatly.
The former are hernias, adhesions, torsion, and blockage to name a few.
The latter are gall stones, and sometimes, kidney stones, that can be caused by dehydration and as a result, the bile/urine concentration being too high and the pigments, salts and fat included in them crystalize and form stones. This is another reason you need to be consciencious about keeping well hydrated.

Yes. The pouch is said to settle itself from around 6-12 months, and you should be able to get in 2-3 oz, sometimes up to 6 oz per sitting in the end.
So, to your second Q here, depending on what amount you consider eating like a bird, the answer can be either yes or no.

This depends on what your definition of "enjoy eating" is.
Is it a heaped plate of food of whatever you mind fancies?
Or is it eating healthy, and enjoying the conversation and congenial atmosphere that accompanies an enjoyable meal rather than the meal itself as in blocking out everything else for the sake of food?
If it's the former, then the answer is a qualified "no". To keep your initial weight loss success, you will need to watch what food you eat and in what amounts. It is possible to sabotage your tool, heap your plate, and graze as you will, which as a result will lead to the return of your weight, which I am sure you do not want to happen.
If it's the latter, then the answer is a resounding yes. You won't let food consume your thoughts, you'll be able to interact much better with the people who are with you, enjoy the conversation and enjoy the atmosphere of the place. Have a lot of fun.

As Lisa says, yes, hunger will return. When differs with people. Some will feel it very early out, while others won't feel it until past 12 months.
Actually, to be able to "feel full", you also need to understand what "feel hungry" is, as you need to know the sensation of empty in relation to full.

Actually, it is fine have water on hand to sip a very very small amount, just enough to moisten the food for swallowing, but only for that.

Get out and show off the new you, young lady!

Devise a survival kit to have with you all the time, that includes water and protein loaded snack that you can eat on the go if needs be. BreeChick introduced her home made protein ball in the Recipe section a while back which you might want to check, or choose your favorite protein bar. Something like that.
