B: Hot Tea - Black Vanilla with a bit of FF Hazelnut creamer & 1/2 of stevia
L: **Deb's Homemade Chicken Vegetable Soup (about 1C.) w/ 5 Reduced Fat Ritz Crackers...I ate sllllllooooooowwww....and probably too much!!!

I have to say...I'm soooo proud of myself....I've never made homemade soup, and WOW! there is nothin like it! Hopefully I will be able to "recreate" it the next time....Last night we had Rotisserie Chicken, Cornbread stuffing, Salad, & Mashed Potatoes! I used the leftover Chicken for my soup....

**Here's what I did to make the soup:
(we ate about 1/2 the chicken...so, I pulled off the wing and other leg for Russ' lunch.)


I put the rest of the bird in a big stewing pot covered it with water...and added some salt, garlic powder and a little onion powder.
Brought it to a boil....then turned to simmer for a while....(about an hour).

After the hour or so - I poured all the contents thru a strainer...catching all the liquid in a bowl...then returning it to the pot. (THIS IS WHERE I'M Proud...b/c I normally can't "handle" - "physically handle" chicken on the bone...but b/c it boiled for a while it just fell apart...)

I pulled all the excess meat off and returned it to the liquid broth.

Then added all the veggies & herbs:
  • 1 large Carrot
  • 1 large Onion
  • 1 leek
  • 2 medium Red potatoes
  • 2 turnips
  • 1 parsnip (looks like a white carrot)
  • 2 stalks of celery
  • and a bunch of parsley
This was all new to me....I've never cooked with Parsnip - wow, The starch in the parsnip root changes into sugar, resulting in a strong, sweet, unique taste. AND turnips - they look kinda like a large radish except are white/purplish....and once cooked looks kinda like a potato...so interesting...and what a wonderful combination - as all made a wonderful stew-like soup!

I put all the veggies in whole...and as it simmered (another hour or so...) I took some kitchen shears and cut the veggies and herbs. (I liked it all together b/c it seemed like I could cook it longer...without the potato becoming mushy...or the onion becoming soggy.)

I cooked the whole concoction after adding the veggies for about another 2hours or so....AND WOW....it was sooo flavorful! LOVE it!!!
Hope you'll try it!
I now will never look at soup/stew the same!
